Crusted Zucchini Fries Recipe

  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • Salt and pepper to taste
  • Chopped chives for garnish

Directions:

Step 1: Preheat your oven to 425ºF. Line a baking sheet with parchment paper and lightly spray it with cooking spray.

Step 2: Cut the zucchinis into fry-shaped sticks, about 1/4-inch thick and 3-4 inches long.

Step 3: Place your kettle chips in a food processor and pulse until they are finely crushed. Transfer the crushed chips into a shallow bowl.

Step 4: In a separate bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. In a third shallow bowl, whisk together eggs and milk.

Step 5: Dredge each zucchini stick in the flour mixture, shaking off any excess. Dip the floured zucchini stick into the egg mixture, allowing any excess to drip off.
